I normally would use Coconut or Oat Milk while others may choose a Fruit Juice; but what about Beet Juice?
I was running low on Coconut Milk and wanted to save it for tomorrow morning. And, because today is the Sabbath, I couldn’t just go buy another carton. Then, I saw it… Beet Juice. I grabbed it, poured it in the blender and added some various other things. The results, I’m happy to say, were wonderful!
Here’s what I did:
-Beet Juice (I normally eye-ball it, but I’d say maybe about 6-8 ounces)
-1/2 cup Frozen Mango
-1/2 cup Frozen Avocado
-1/4 cup oats (uncooked)
-about a 1-2 inch cut of Cucumber
-small spoonful of Chia Seeds
-dash of Ground Cinnamon
-dash of Ground Ginger
It was initially very good, but it felt like it needed something a little extra, so I added a drop of food-grade peppermint essential oil. I’d say it would probably go well with Peppermint Leaves, too, but this did the trick since I didn’t have any on hand.
On another note, adding a Carrot and a leafy-green such as Kale, Spinach, etc. along with some Celery would give it a deeper flavor and almost mimic a V8. That’s the beauty of blending smoothies; the possibilities are endless and you can always add, subtract, or substitute things.
And that was my breakfast! It was very simple and made in a pinch. Enjoy!
